Chicken Florentine Casserole in the crockpot

I have said all of this before, but I love allrecipes.com and I love Bountiful Basket!! I plan my menu for the week based on what I get in my basket. We eat a lot healthier sincbased on those two ingredients. This recipe is soo delicious! 
I am going to give you the recipe how I made it, then I will give you the original recipe. I did not have all the ingredients so I omitted and substituted some things.

Chicken Florentine Casserole in the crockpot

4 skinless, boneless chicken breasts halves
1/4 cup butter
4 cloves minced garlic
1 tbl lemon juice
1 can condensed cream of mushroom soup
1 tbl italian seasoning
1/2 cup whole milk
1/2 cup grated cheddar cheese
1 bunch of fresh spinach
4 ounces fresh mushrooms, sliced

1. Melt butter in medium saucepan over medium high heat. Stirring constantly, mix in the garlic, lemon juice, cream of mushroom soup, italian seasoning, milk and cheese.

2. Arrange spinach over the bottom of a crockpot. Cover the spinach with the mushrooms. Pour half of mixture from the saucepan over the mushrooms. Arrange chicken breasts in the dish. Sprinkle chicken with papirika, salt, and pepper. Top with remaining sauce.

3. Cook on low for 4 hours. (My chicken was frozen so I cooked it on high for 4 hours). If sauce is a little thin, add some flour and stir. Serve over noodles or rice.

This way turned out awesome and it was easy since it was in the crockpot. Now here is the original recipe, which is also awesome!

3 tsp minced garlic
1 tbls lemon juice
1 can condensed cream of mushroom soup
1 tbls italian seasoning
1/2 cup half and half
1/2 cup grated parmesan cheese
2 (13.5) cans spinach, drained
4 ounces fresh mushrooms, sliced
2/3 cups bacon bit
2 cups shredded mozzarella cheese

1. preheat oven to 400 degrees. Melt butter in medium saucepan over medium high heat. Stirring constantly, mix in the garlic, lemon juice, cream of mushroom soup, italian seasoning, half and half, and parmesan cheese.

2. Arrange spinach over the bottom of a 9x9 inch baking dish. Cover the spinach with the mushrooms. Pour half of mixture from the saucepan over the mushrooms. Arrange chicken breasts in the dish and cover with remaining sauce misture. Sprinkle with bacon bits and top with mozz cheese.

3. Bake 25 minutes until bubbly and lightly browned.

Rag Quilt Letters


I found this Rag Quilt Letters tutorial on this awesome blog, happy together. She has such cute ideas! I made these for my 18 month old for Christmas. I did not quilt my letters and I just made them from some left over fabric. They are all made from cotton. All three of my kids play with these letters all the time. I love them!!

Women's t-shirt to kid skirt

I have a really hard time giving clothes to goodwill. I do not have a problem going through my closets, but giving them away is a problem for me. I just know that I could make those clothes into something else. I went through my closet recently and kept a lot of shirts and jeans. I made one of my shirts into a skirt for my daughter.

I did not take a picture of the shirt before. It was a v neck with some buttons so I cut the shirt right under the v part of the neck. I had the bottom of the shirt, and it would fit my 4 year old perfectly as a skirt, so that is what I made! I love how it turned out. I just made a simple elastic waistband for the waist. No hemming the bottom since it is already hemmed :) I used the bottom of the shirt as the bottom of the skirt. I made it in 10 minutes...easy!

Mini Meatloaves Recipe

I made this recipe for dinner last night and it was delicious, even my picky 3 year old ate it!

This is how I made it:

1 pound ground beef
2/3 cup fine dry bread crumbs (I used Italian seasoned bread crumbs)
1/2 cup milk
2 eggs
1/2 onion, chopped

Preheat oven to 375 degrees. Mix all the above ingredients together. Spray muffin pan with nonstick spray. Press meat mixture evenly into 12 medium muffin cups. Make an indentation in center of each with back of spoon. (Make a little hole in each meatloaf!)

3/4 cup spaghetti sauce
3/4 cup cheese (I used cheddar, because that is all that I had)

Spoon spaghetti sauce into the indentations in the meatloaves.

Bake 30 minutes or until meatloaves are cooked through. Top with cheese and bake 5 more minutes or until cheese is melted. Let stand 10 minutes before serving.

Makes 6 servings, 2 meatloaves each.

My latest project!

For my Christmas present this year, my husband surprised me with a miter saw. (I know it is not Christmas yet, but my husband does not know how to wait until Christmas!) I have been asking for one ever since I found Ana's awesome site ana-white.com. You have to check it out! She is so talented and has a ton of building plans. My first project was a picnic table for my kids. You can find the plans here. It was really easy to build, especially with my husband helping me. The paint I bought was oops paint from Home Depot and it only cost $1. Love it!



For my next project....My husband and I are building this dollhouse for my daughters for Christmas this year. We are changing it a bit so it can fit Barbie dolls since that is what my girls love to play with. I am excited to start building it. I just bought all the materials!!

Baby gifts!

My baby is almost 18 months old and I don't make the itty bitty baby things anymore, except for gifts. I made this skirt, little baby booties, and headband for my friend's new baby girl. The fabric is corduroy again. I have a lot of corduroy right now. It keeps going on sale! I love making these baby shoes. I got the pattern from Stardust shoes. They are so easy to make. I used the same fabric as the skirt. For the bottom of the shoe, I used pink flannel. And for the elastic casing, I used this really soft material that I had. I made up the headband and really like how it turned out.


 I cut out three different size ovals from my fabric, then cut out some tulle. Layered it. Added a button. Then sewed it to 1/4" elastic.

 I do not have the pleasure of making many boy things, because I have three girls. My friend asked me to make her little boy a tie, so here it is...
I followed this tutorial on Very Homemade and it was really easy to make. I made it in 10 minutes. The neck is velcro. My 3 year old daughter loved being the model for it. She asked me to make her a tie! I also made a matching tie for my friend's husband. I made up the pattern for that. I traced one of my husband's ties and put it together. It actually worked and it looks great. I still need to take pictures of it, but I do not know how to tie a real tie!

I love corduroy fabric :)

Well, not much crafting has been happening at my house between my family and the four classes I am taking this semester. It is so sad, but I managed to finally finish this dress. I won't tell you how long it just sat on my sewing desk waiting to be hemmed... 5 months too long!

I love corduroy fabric and I love when I find it for really cheap!! I just finished making this dress for my niece and I love it how it turned out!
