Mini Meatloaves Recipe

I made this recipe for dinner last night and it was delicious, even my picky 3 year old ate it!

This is the original recipe:

This is how I made it:

1 pound ground beef
2/3 cup fine dry bread crumbs (I used Italian seasoned bread crumbs)
1/2 cup milk
2 eggs
1/2 onion, chopped

Preheat oven to 375 degrees. Mix all the above ingredients together. Spray muffin pan with nonstick spray. Press meat mixture evenly into 12 medium muffin cups. Make an indentation in center of each with back of spoon. (Make a little hole in each meatloaf!)

3/4 cup spaghetti sauce
3/4 cup cheese (I used cheddar, because that is all that I had)

Spoon spaghetti sauce into the indentations in the meatloaves.

Bake 30 minutes or until meatloaves are cooked through. Top with cheese and bake 5 more minutes or until cheese is melted. Let stand 10 minutes before serving.

Makes 6 servings, 2 meatloaves each.
